This is Jo's family recipe for potato salad. Wherever we bring this one, people always ask us for the recipe, so here it is! Enjoy!!
Ingredients:
⅓ cup green olives, chopped
¼ cup roasted red peppers, chopped
2 eggs
¼ cup red onion, chopped
3/4 cup mayonnaise
2 lb red potatoes (about 5 cups after you cut them)
2 teaspoon salt
The first step is to boil the eggs and potatoes. Place a large pot half filled with water on the stove and turn on high. Add the salt and the eggs and bring it to a boil. Once the water is boiling then add the potatoes and mix making sure that the potatoes are completely covered with water.
Cook the potatoes for 20 minutes or until they are tender. You can check the potatoes with a fork to make sure that they are cooked. Once they are tender then remove the pot from the stove, strain the potatoes and rinse well with cold water. The cold water will prevent the potatoes from sticking to each other and overcooking.
Now you are ready to prepare the mix. Start by chopping the boiled eggs in small pieces. You want to make sure that they are about the same size as the onions, olives and peppers to create an even bite.
While the potatoes are still warm, add the mayonnaise, eggs, olives, red peppers and onions to the potatoes and mix thoroughly to make sure that all the flavors combine.
You want to be gentle with the potatoes so you don’t break them but you also want to make sure that all the flavors are evenly distributed.
Once it is mixed, then try potatoes and adjust for salt if necessary. Now, cover the potatoes and place them in the fridge until they completely cool. Then you're ready to dig in!
